Back when I was in college (go Sun Devils!) I worked at a hair salon. One of my co-workers made the best chocolate chip cookies around.

I didn’t do a ton of baking in those days, but I had to have her cookie recipe. The chocolate chip cookies had so much flavor, great texture, and little bits of chocolate flecks throughout.

Neiman Marcus Chocolate Chip Cookie Legend

The Neiman Marcus legend goes something like this. Supposedly a woman was eating lunch at the Neiman Marcus cafe and quite enjoyed the cookies. So she asked for the recipe. She was told that the cost was “two fifty” and assumed that meant $2.50.

Then later on a bill, or charge on her card, shows up for $250 for the recipe. She then shares it with the world, and here we are.

Except, at least according to Snopes, that’s all false.

Delicious Chocolate Chip Cookie Recipe

While the legend of the Neiman Marcus Chocolate Chip Cookie Recipe might not be true, these are TRULY delicious cookies.

What makes them different than other chocolate chip cookies? They are distinct, they are not like my Chewy Oatmeal Cookies, Brown Butter Chocolate Chip Cookies, Chewy Chocolate Chip Cookies or Levain Bakery Style Cookies. Those are all delicious, but different.

These cookies have two main differences from most other cookies:

  • They contain oats, but those oats are ground in a food processor or blender
  • They contain grated or shaved chocolate, which really gives every bite chocolate flavor

  • 1 cup butter softened
  • 1 cup dark brown sugar packed
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 1/2 cups oats old fashioned or instant, not steel cut

  • 12 oz chocolate chips semi-sweet recommended
  • 4 oz bar milk chocolate* I actually prefer dark chocolate
  • 1 1/2 cups chopped nuts if desired

Instructions

  • Heat oven to 375 degrees F.

  • First, In a large bowl, cream together butter and sugars with an electric mixer until light and fluffy. Add in eggs and vanilla and mix until combined.

  • Next, Using a food processor, blender or grinder, grind oats to a fine powder. Combine oats, flour, salt, baking powder and baking soda and mix until combined.

  • Slowly add dry ingredients to the wet ingredients and mix until just combined. Add in chocolate chips, nuts and grated chocolate bar and stir until just combined.

  • Drop by heaping tablespoonfuls, 2 inches apart, onto a cookie sheat that has been lined with a silicone mat or parchment paper. Bake for 10 minutes, remove from oven and allow to cool on baking sheet for ten minutes, then transfer to a wire rack to continue cooling.

Notes

*while the recipe calls for a grated milk chocolate bar, I find that milk chocolate often melts into the cookies more than I prefer. I like to use dark chocolate, but it's a matter of personal taste.

My grandmother always made the BEST chocolate chip cookies. I found the Neiman’s recipe in her collection. I am wondering I found OAT FLOUR also wondering about salt or unsalted butter?. It also says brown sugar but does not specify. Do you still need to take oats and blend them? Or can you use the oat flour. When I saw my grandma making cookies she always had the back of the nestle toll bag like she was using their recipe, but I have made those to a tee, and not the same?! Would love your feedback. FAQs

What is the secret to chewy cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

How much is Neiman Marcus cookie? ›

For "only two-fifty," the waitress said, it was hers. But when the credit card bill arrived, the woman found the total near $300. Turns out the recipe cost $250, the story goes. In 1997, after years of enduring the myth, Neiman Marcus came up with a recipe – and gave it out for free.

Why do my chocolate chip cookies always get hard? ›

Don't Overbake!

This isn't a revolutionary tip and is probably quite obvious, but if you leave your cookies in the oven for even a few minutes longer than necessary, the mix will dry too quickly and lead to more rigid, dry cookies.

What is the secret ingredient to keep cookies soft? ›

If you enjoy your cookies soft and chewy, chances are likely the recipe contains a common ingredient that serves a very specific purpose. No, it's not granulated sugar, nor the butter. It's not the egg, all-purpose flour, or even the vanilla extract. The simple, yet oh-so-necessary component is cornstarch.

What is the most expensive cookie brand in the world? ›

Last Crumb: The World's Most Luxurious Cookie Launches New Platinum Collection.

What is the story behind Neiman Marcus? ›

Herbert Marcus, Sr., his sister, Carrie Marcus Neiman, and her husband A.L. Neiman, constructed the first Neiman Marcus store designed to fashionably clothe the entire community of Dallas, pledging fashion, quality, superior values, and unparalleled service which are still upheld today.

What is the most expensive cookie brand? ›

Last Crumb. Luxury cookies born in LA.

Should I chill my chocolate chip cookie dough? ›

For starters, chilling prevents cookies from spreading out too quickly once they're in the oven. If you use a higher fat butter (like Kerrygold), chilling your dough is absolutely essential. Popping your dough in the fridge allows the fats to cool.

Should you rest chocolate chip cookie dough? ›

Youngman says chilling the dough for at least one hour before baking is crucial. An overnight sleepover in the fridge is even better. But if you can't wait, shape your dough into balls and freeze them for 15 minutes before popping them into the oven. So yes, resting your cookie dough makes better cookies.

Should you chill chocolate chip cookie dough before baking? ›

Since most cookies are made with softened butter, which is then creamed with the sugar to act as the foundation, it's best to chill the dough after mixing to allow that butter to cool off. “Cookies made from chilled dough expand more slowly as they bake,” Hill says.

Should you press down cookie dough? ›

And there are no baking police: If your recipe tells you to flatten your cookies before baking, you just go ahead and do that however you want. So long as they end up evenly flat, that is; squashing cookies haphazardly under your palm means they may bake and brown unevenly.

What makes cookies fluffy and not flat? ›

Room temperature butter is just the right consistency to incorporate air when it's creamed with sugar. These trapped air pockets result in risen, fluffy cookies. If the butter is any warmer, it won't incorporate enough air and your cookies will have less rise.

What are 3 factors that contribute to a chewy cookie? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

How do you make cookies stay soft and chewy? ›

Putting a slice of fresh white bread in the container with the cookies will help the cookies stay soft: fresh bread is moist, and that slice will give up its moisture for the greater good: keeping the cookies from drying out. We recommend white bread so that no flavor is transferred to the cookies.

Why are my cookies hard instead of chewy? ›

Hard cookies: you are over mixing, baking too long, baking at too high a temperature, or some combination of these. Cakey cookies: not enough brown sugar, too much or too little egg, too much flour, maybe you used baking powder instead of baking soda?

What makes cookies chewy butter or shortening? ›

But, it turns out that margarine or vegetable shortening is the secret to chewy cookies. I still make mine with butter, though.
