How To Make Peach Simple Syrup

- Place the saucepanover a medium flame and stir occasionally until the sugar has dissolved.
- Bring to the boil and boil for 2 minutes.
- Switch off the heat and allow the syrup cool and let the peaches sit in the cooled syrup for 1-2 hours.
- Strain and decant into a container and keep the peach simple syrup in the fridge until required.

- 4 cups (946mL) water divided
- 4 cups (900g) granulated sugar
- 8 peaches pitted
